So I'm going to go with: 'Yes, and all humans can be vegans. But they aren't.'" Balthazar has a glass of brandy in one hand, but he seems as sober as he ever is.
Sam sighed softly, knowing the angel was right. He just wished there were more creatures in the world that were better than their vicious counterparts. Lenore had proved it possible to him, and now he tried to see it in creatures when it wasn't there.
"Most human beings don't kill and eat other people," he argued, though he knew that some people were worse than any monster he'd ever faced.
Truth be told, Balthazar finds Sam's willingness to look for good in monsters rather charming. On the other hand, it's a great way to get oneself eaten alive. "No, but eating is a very essential biological function. It's a powerful drive in humans, and it's a powerful drive in vampires, most of whom start out as humans."
He sips his brandy, then holds out the glass, offering to share. "I don't have to eat, although I enjoy it occasionally, so my perspective is different, but don't you think that for some dishes humans serve, part of the appeal is the aftertaste of suffering of the creature they're consuming? Veal, ortolan, foie gras...terrible things if you're a cow or a bird."

Sam held up his hand at the offer, a silent refusal. He didn't drink very often- especially not compared to his brother- and almost never in the middle of the day. He would leave that to Balthazar.
"I've never felt any joy in knowing what I'm eating is a dead animal," he said, though the angel had a point. He knew there were people out there who would most definitely take pleasure in knowing that a creature had been slaughtered for the sole purpose of them eating it.
"No, nor I, but you have to wonder about whoever first looked at a songbird and thought, 'Ah, that would taste lovely if I poked out its eyes and drowned it in brandy!'" He peers into his own glass as if making sure there are no feathers in it, then takes another sip and leans against the nearest flat surface idly.
"I'm not criticizing, precisely. The way of the world is that every death serves another life. But humans aren't immune to the impulses that drive the creatures you and your brother hunt. The difference is that humans have a greater capacity to rise above those impulses. In theory." Haha, yes. In theory. He's not placing any bets on humanity as a whole, clearly.
"I like to think that it was done out of necessity, not cruelty." That once a man was so starving that he turned to whatever source of food he could to survive, and discovered that animals were edible. The idea that the concept of eating meat came about in any other way was almost enough to make him want to stop. Except for the fact that Dean would never let him get away with not eating meat.
"If humans have a greater capacity for it, and vampires used to be human, why don't they have it as well?" he asked. It stood to reason that if they had the willpower in one form, they should have it in another.
"Oh, maybe. I wasn't around for that. Well, I was around, but not on the planet." He makes a vague gesture that might be meant to signify a multidimensional wavelength of Celestial intent. Or it might just be an exaggerated shrug.
"And you'll have to ask Eve that one. Most of her creations seem to be based off humanity, although there are some that predate your species. Maybe in some way monsters are more like animals. Stripped of some of the baggage you carry, like ethics, or the desire to create art. Perhaps she thought she was making improvements. But I'm only speculating now, I never met the lady."
He sighs. "Sam, I'm sure you'd be delighted if tomorrow all the beasts and demons in the world became comprehensible creatures you could negotiate with and understand rather than kill. But be careful with your sympathy. It's a strength that could become a rather significant liability."
