He's a chef and he decided to play maitre'd for the first time in a decade.

He pulled it off too.

Because he's not trained to run front of house and he did it anyway. Not only did he do it, he did it on a Friday night with a full dining room, and still helped finish dessert.

[She laughs. Tasha can't believe the night her restaurant has had.]

Am I crazy? That probably depends on who you ask.

If he’s been there for a while, he probably learned a lot just by observing. I’m very glad it all worked out well for you.

A good crazy, perhaps.

[He's glad he didn't say he could relate to her initial statement. They would have meant lunatic oh so differently.]

I guess as a chef you have to, like, juggle a lot of different shit at once, right?

Eight years. And he's a smart guy. But to go from back of house to front of house on one of the busiest nights of the week is...he's got balls.

[Laughs.]

I'm sorry, does this all sound like French to you? I forget that chef is its own language.

You do. And we had a problem and he was like, "Screw it, I'm just going to fix it."

I just can't believe he did it. And as if that wasn't enough, he still came back into the kitchen to help finish dessert. He's nuts.

I worked at a restaurant for a while, and I own a cafe. It’s not the same as your setup, but I think I get the basic idea.

Then you know. He's definitely crazy.

[She chuckles.]

I will admit it was kind of fun. To see him in a suit and tie again and then to laugh when he just strolled back into the kitchen like he does this all the time.

Our regular maitre'd is back tomorrow but I know for a fact she's laughing now.

I hear a lot of chefs do uppers 'cause of that. Having to be on point with, like, a billion things at once. Sounds stressful.

It's where the expression "if you can't stand the heat, get out of the kitchen" comes from.

[She thrived in that environment but few people did.]

I just happen to have one hell of a partner.
